The story, from the beginning to today

Antonio Lo Verso, a pastry chef from Palermo, prepared this dessert in his café in 1901, on the occasion of the opera Iris by Pietro Mascagni. His creation became so famous that it induced Lo Verso to change the name of his café to Iris. From that moment on, the Iris pastry shop became a point of reference for all the aristocracy and the bourgeoisie of Palermo who ate it for their breakfasts with coffee.

How it is made (it)

L'iris è una preparazione fatta di pasta lievitata dolce fritta. Nonostante sia dolce, viene annoverato tra i classici cibi di strada della cucina palermitana, venendo gustato caldo e a tutte le ore da cittadini e turisti. L'iris è un lievitato dolce di forma sferica (similmente al krapfen o al bombolone) che racchiude un ripieno: quello tradizionale prevede crema di ricotta dolce e cioccolato fuso (talvolta sostituito con pezzetti di cioccolato). Nel catanese è diffusa la variante al pistacchio, cioccolato e crema bianca. Una certa diffusione nel palermitano ha anche una variante dell'iris con l'impasto di brioche cotto al forno, tradizionalmente con il tuppo sopra.
