Entrambe le parti del biscotto sono realizzate con lo stesso impasto, a base farina, acqua, zucchero e spezie come cannella e chiodi di garofano: l'impasto viene preparato, modellato e lasciato riposare per alcuni giorni, finché la superficie si è asciugata del tutto. Quindi i biscotti vengono cotti in forno: la parte superiore diventerà bianca e dura, mentre la base, inumidita, risulterà più scura, morbida e caramellata, grazie allo zucchero colato dalla parte superiore.

Preparation

Both parts of the biscuit are made with the same dough, based on flour, water, sugar, and spices such as cinnamon and cloves: the dough is prepared, shaped and left to rest for a few days, until the surface has dried completely. Then the biscuits are baked in the oven: the top will become white and hard, while the base, moistened, will be darker, soft, and caramelised, thanks to the sugar dripped from the top.
