Cannolo nisseno (卡尔塔尼塞塔的卡诺里)

Caltanissetta claims the origin of the cannolo. Some food historians place it between 827 and 1091, in the Arab period: legend credits the concubines of the princes, who used the sweet to catch their attention, and later the cloistered nuns who made it for Carnival. The name comes from the river canes around which, in the seventeenth century, the shell was rolled.

The Caltanissetta cannolo sits beside the ricotta raviola, the paste velate and the rollò in the city's pastry tradition, all built around ricotta.

On 11 September 2022 the world's longest cannolo was made here: 21 metres and 43 centimetres, seven quintals of sheep's milk ricotta and sugar, dozens of pastry chefs at work. The record was validated by Guinness World Records on 22 January 2024.
